A Traditional Russian Treat That Can be Salty or Sweet

Growing up, there was nothing I loved more than sitting in the kitchen, watching my grandma and mom prepare dish after dish of delicious food for a family gathering. From mixing the salad to getting the eggs out of the refrigerator, I cherished the moments when I could help out. So when I finally became old enough to cook on my own, I could barely contain my excitement.

One of the very first recipes my mom shared with me was blinis. Blinis are traditional Russian pancakes, similar to crepes that can be filled with just about anything. From a sweet filling such as apples and honey, Nutella or brown sugar to a savory filling such as sour cream, there’s no end to what you can fill your blini with. If you’re feeling adventurous and ready to spend a whole lot of money, try a traditional Russian filling, caviar. Or go the safe route and try a plain Blini. No matter what you choose, I promise you’ll enjoy every bite.

Materials:

  • Mixing Bowl
  • Frying Pan (8 inches in diameter)
  • Whisk
  • Spatula
  • Knife
  • Ladle

Ingredients:

  • Cooking Spray
  • 5 eggs
  • 1/4 teaspoon of salt
  • 2 tablespoons of sugar
  • 6 tablespoons of flour
  • 2 cups of milk

Directions:

  1. Whisk together eggs until mixture is frothy.
  2. Into egg mixture, add in sugar, salt and milk.
  3. Then slowly mix in flour, making sure that no clumps form in the mixture.
  4. Turn on stove to high heat and spray cooking oil ontol frying pan.
  5. Fill about 2/3 of the ladle with the mixture and pour it onto the frying pan. Make sure the mixture evenly coats the entire pan.
  6. Using a knife, lift edge of blini to see if bottom side is cooked. If the bottom lifts easily, use spatula to flip the blini.
  7. Using the knife, check to see if the other side is ready. If it lifts easily, take blini off of the frying pan.
  8. Repeat steps 5 through 7 for the rest of the mixture. Make sure to spray pan with cooking oil between every blini. The mixture makes 12 to 15 blinis.
  9. Place desired filling into blini or serve blinis as they are and enjoy!
